Thursday 8th September - porridge, pasta, butter, mayo, salad, dressing

Breakfast - porridge

Made: butter (Quirky Jo's recipe as usual)

pasta (heat water, add pasta, cook 14 mins - as per the pasta I was cooking recipe) for pasta salad.

mayo - usual recipe, so easy and successful as usual.

carrot, celery, capsicum - chopped for a salad and some in the pasta salad.

dressing for pasta salad (mayo, extra white wine vinegar, mustard, cream cheese)

So quite a lot of tmx uses today. Lunch and dinner were bought rolls and cold meats etc to go with the salads.

Mon 15th/Tues 16th August - porridge, coleslaw, butter

Monday 15th - just porridge for breakfast I think. Lunch was leftovers and dinner was oven baked fish and chips.

Tuesday 16th -
Breakfast - porridge.

Made a couple of salads for lunch/dinner - made coleslaw in the tmx (and a cous cous salad on the stovetop).
Made a batch of spreadable butter (Quirky Jo's recipe see several entries on here).

Thursday 23rd June - porridge, pearl couscous salad

Breakfast - porridge.

Lunch/dinner - made a 'couscous' salad.
Using Pearl couscous? I think it's called that. It's a large (well for couscous, tiny for anything else, lol) round couscous like pasta. (Found it at the Woolworths a few weeks ago) So chopped garlic and onion and sauted. Added 125g of the cous cous, 1 cup of water, 2 tsp of vegie stock concentrate, tsp of ground cumin and cooked for 10 mins (reverse, speed 1)
This tasted great but I think was a little overdone and next time I might steam it or cook on the stove as it only just held the pearls. I would also be interested in the frying it first technique mentioned on the packet.
Left to cool and mixed in chopped parsley and a little chopped coriander and a dressing made of limes, red wine vinegar and olive oil.
Really yum and will perfect this one.

Saturday/Sunday 28th/29th May - chicken and chorizo stew, pikelets, salad, creamy brown rice soup

Saturday

Dinner - chicken and chorizo stew - will post recipe later. This was really yummy. Despite being quite spicy dd2 loved it and she usually doesn't like a lot of sauce or too much spice.

Sunday

Breakfast - pikelets using nay-nays recipe off the forum - yum!!

Lunch - carrot, celery and capsicum salad (with a little mayo and sour cream)

Dinner - Quirky Jo's creamy brown rice soup - yummy as always.

Sunday 6th March - dip, salad

Made dd3's favourite dip for her party today - the garlic and herb from the EDC (or the white one as she calls it) and then made a carrot, capsicum and spring onion salad.

The party went great and the cake was a hit. Now we just have to make the 40 cupcakes for preschool - am thinking of doing cheese and zucchini muffins as they are her favourites, but not sure if too many of the kids would be disappointed.

Sunday 27th February - pancakes, stock, soup, banana bread, fruit balls, marinade, mayo, carrot salad, fried rice

Breakfast - pancakes

Lunch - made chicken stock and then a soup using the stock, soup mix (cooked for 30 mins), mixed vegies (cooked for 15mins) and some pepper.

Once again a massive hit.

Dried fruit balls for this weeks lunch boxes:

Marinade for tonight's dinner (stir fried chicken) - ginger, garlic, chili, soy sauce, fish sauce, sesame oil.

Then made a batch of mayonnaise.


Also made a quick carrot salad for lunch tomorrow (hate to waste the mayo left in the bowl so leave a bit in and then chop a carrot and/or other veg).

Dinner - we had stir fried chicken, cashews and brocolli (using the marinade above) made on the stove top whilst the Thermomix made fried rice (garlic rice, with veg steamed in the varoma for 10 mins and eggs added to the varoma in the last 5 mins).

Was really pleased with this meal. Very quick to make and the marinated chicken was divine!



Saturday 19th February - porridge, dips, salad, stock

Breakfast - porridge

Made 2 dips - garlic and herb and hummus for a bbq we were going to for dinner.
After making the garlic and herb I made a quick carrot and capsicum salad (always make some kind of salad to use up the last of the dip in the bowl) then made some hummus to take as well.

Also made some chicken stock. Hope it's cooler tomorrow to make some soup.

Oh and here is a photo of this weeks rice bubble bars - haven't posted one in ages.

Friday 14th January - mayonnaise, coleslaw, guacamole

Made mayonnaise - so happy with the recipe I'm using now (from the forum) 1 egg - 2 mins 37°, then programme 5 mins 37° and add the 250ml of grapeseed oil, at the end add vinegar/lemon/mustard etc to taste, can chop garlic at the beginning as well. Made it quite a few times now with no fails!

Then as usual a coleslaw without cleaning the bowl.

Dinner was dd1's choice of nachos and made guacamole to go with them in the TMX.

Dinners this week have been different to usual and missing my TMX meals, will have to make up for it next week.

Monday 10th January - coleslaw, babi pong tay

This morning made coleslaw for dh to take to work.

Dinner was Babi Pong Tay again as found some pork ribs on special. Was going to do the slow cooked one but ran out of time.

Friday 7th January - porridge, raw ranch dressing, coleslaw, ltm, choc icecream, honey soy drumettes and veg

Breakfast - porridge

Lunch - made raw ranch dressing and coleslaw

Raw Ranch dressing

1 cup soaked raw cashews

¾ cup water

2 tbsp lemon juice

½ tsp garlic powder

parsley and basil (small handful)

pinch of salt

(original recipe had onion powder, basil and dill)

Process the cashews, water, lemon juice, garlic powder, onion powder and salt until smooth and creamy - 1 minute speed 6-7.

Add basil and parsley and pulse 3 times to chop and mix.

LTM's - run out of kids snack stuff!
chocolate icecream
using this http://www.forumthermomix.com/index.php?topic=2066.0 Egg free recipe with condensed milk. I did 300ml milk/300ml cream as find the full cream icecreams a bit rich.

Dinner - honey soy drumettes and varoma veg with rice
Still a favourite of everyone's!!

Thursday 30th December - smoothie, mayonnaise, coleslaw, potato salad, chicken and brown rice soup, tortillas, stock

Breakfast - smoothie.

Then made
  • garlic mayonnaise
  • without cleaning the bowl some coleslaw
  • steamed potatoes and eggs for potato salad
To go with chicken and salad for lunch.

Dinner - QuirkyJo's Creamy Chicken and brown rice soup
And some of TrudyO's Tortilla's.
(with leftovers from lunch)

And some stock with today's chicken carcass.

Monday 27th December - porridge, potato salad, coleslaw, bread rolls

Breakfast - porridge.

Lunch - made a dressing to go with the potato salad I'd prepared yesterday.
Made coleslaw and two lots of bread rolls as we had friends round for lunch.


Friday 24th December - pancakes, dips, pate, coleslaw, bread, shortbread, Honey Mustard Chicken

Breakfast - pancakes

In the morning I made - garlic and herb dip (with chives and parsley - a really nice change to the spring onions) and hummus for Christmas Day tomorrow.
I also made the chicken liver pate in the EDC - very impressed. So cheap, quick and easy to make two big pate containers - dh is currently enjoying some!
Will be off looking at pate recipes now as it's just so professional looking.

Made coleslaw (instead of cleaning the tmx after making the garlic and herb dip).

Made a loaf of bread.

And a double lot of shortbread.

Dinner was Trudy O's Honey Mustard Chicken. Another simple, quick and very tasty Thermomix meal. Compared to most other people we would go for a little more mustard (dh thought a little hot english, I was thinking a little dijon) as we like things with a lot of flavour. Kids all enjoyed so this one is def on the menu.
I cooked red capsicum and mushrooms in with meal and served with rice and carrots.

Wednesday 22nd December - mayonnaise, coleslaw, tortillas, strawberry jam

Morning - garlic mayonnaise (using the whole egg, then oil then flavouring recipe from the forum)
Then made some coleslaw to use up the mayo in the bowl.
Lunch - tortilla's.
Afternoon - strawberry jam.
Sure there was another use in there but dinner was sushi (oooh could have done the sushi rice in the tmx, used the rice cooker as always) and breakfast was eggs so not sure what else.
OK not TMX but also dehydrated a load of oregano - it's gone manic with all this rain!

Monday - 20th December - coleslaw, bread, beef madras

Lunch - coleslaw (carrot, cabbage, celery, red capsicum with a little mayo) to go with other salad ingredients, ham, cheese and tortillas.

Made a loaf of bread.

Dinner - Beef madras - cooked the madras that I converted from the Cole's Curtis Stone recipe - published on here and the forum. Once again very yum!!
Served with rice and veg. (older two girls aren't keen on curry or sauce or a lot of meat so they have rice, veg and a bit of the meat whilst dd3 and I love the rice and sauce.)


Sunday 5th December - porridge, smoothie, Christmas Shortbread, dip, salad, tortillas, slow cooked ribs, potatoes, steamed veg

Breakfast: porridge and 4 berry smoothies

Spent a lot of the morning in the kitchen

Pistaschio and cranberry Christmas shortbread
Kids had this for desert and loved it.
Lovely red, green and white festive colours.

Not TMX but also made some more Xmas chocolates (the girls have been loving having a little advent chocolate in their lunch boxes as a December treat) and easiyo yoghurt

Lunch - garlic and herb dip
Carrot, capsicum and lime salad (with leftover dip in the bowl)
Tortillas (Trudy Olive's recipe)
(also tomato, cucumber and feta salad and leftover veg from last night)

Dinner was Helene's slow cooked ribs
These are just so scrumptious, though I over reduced the glaze, but just slapped it on and cooked and worked fine. Well worth the time and effort - though really they aren't that much work so long as you are around the house.
Served with parmesan salt potatoes (cubed potatoes, cooked in the basket 20 mins; then rinsed and dried the bowl, chopped parmesan and salt and then tossed in the potatoes and a little EVOO and mixed for 10secs, reverse, speed 1. Then popped in a roasting tray with a little more oil and baked in the oven to crisp up.)
And steamed vegetables in the Varoma.

Saturday 13th November - mayonnaise, salad, shortbread, bread, choc icecream, tortilla, garlic butter, vegie soup

Made mayonnaise - as per the thread on the forum, so as per the edc but using vinegar and heating to 37°. A real success, now I can't wait to experiment with different flavours over the summer.


carrot and cabbage salad - Without rinsing from the mayo I made a carrot and cabbage salad to go with lunch.

dd1 made shortbread. Finally she is able to close the TMX lid so hopefully plenty more cooking to come from her.


Made a loaf of bread.

Made Julie O's chocolate ice cream from the forum http://www.forumthermomix.com/index.php?topic=2085.0. OMG this is so rich and delicious. So easy to make real chocolate ice cream with the TMX to melt the chocolate and mix the ingredients. I used my ice cream maker to churn it.


Dinner. Garlic bread tortilla's and vegie soup. (this was a slightly chunky soup which you can't see in the photo)

Made up a batch of tortilla's using Trudy Olive's recipe from the forum.
Made garlic butter (garlic, parsley and butter, mixed together, at 37 ° as the butter was from the fridge.
Whilst the girls divided up the tortilla dough I made a soup.
Chopped garlic, parsley and oregano. Added the chicken stock I made yesterday, added carrot, celery, spring onion and chopped. Added cubed potato and peas (that dd3 was podding), a little soy sauce, a little tobasco, pepper. Cooked 20 mins 100° sp 1

Cooked the tortilla's and for the ones for dinner spread some garlic butter on them and cooked for a few minutes in the oven till brown and crispy.
Yum, this was such a lovely dinner, the soup was nice and light (it was hot today) and the garlic tortilla's really tasty.
We had some of the chocolate ice cream for dessert - did I mention how yummy this was, lol.

Monday 8th November - kfc spice mix, meatballs, flat bread, salad

Made up chookie's kfc spice mix from the Thermomix forum.

Dinner was a request for the Skewered meatballs with Rosemary Flatbread, and Carrot Salad that was featured on last week's Junior Masterchef masterclass.

Here is my version adapted to the TMX.



Meatballs (though I think of them more as kebabs).

Ingredients
2 tsp cumin seeds
2 tsp coriander seed
1 tsp paprika
2 tbsp parsley
2 tbsp coriander
sprig rosemary
1/2 onion
400-500g beef (cubed)
zest 1 lemon

Method
Place cumin and coriander seed in bowl and cook 3min 100° sp 1
mill 20 sec sp 8
set aside
add onion, parsley, coriander, rosemary and lemon zest
chop 6 sec sp 5
Add meat and spices and mix to a smooth paste - closed lid position, pulse 4-5 times.

Place around a soaked skewer or rosemary stalk. (I did both and don't think using the rosemary stalk skewers added anything - though maybe as I'd added rosemary to the recipe).

I cooked mine in the oven for 15 mins but would be lovely grilled, fried or bbq'd.

Rosemary Flatbread

There recipe was
1 1/2 tbsp EVOO
1/2 cup warm water
250 g plain flour
1/2 tsp salt
1 tbsp rosemary

I mixed this up and then kneaded for 2 mins but it was too dry so added more water and rekneaded. It should be elastic and slightly moist but not too sticky.

Leave to stand for 20 mins, then break into small balls (1 inch round approx), and roll out on a floured surface (will need quite a bit of flour) until thin. Heat a non stick pan and dry fry the flatbreads.

Salads

I didn't make their carrot salad as it didn't appeal to us, but made 2 salads
1. Carrot, cabbage, green capsicum, parsely and coriander - chopped in the TMX with the juice of a lemon.
2. Tomato and Cucumber salad - chopped tomato and cucumber, tossed with chopped parsley and coriander and olive oil.
3. Didn't have any spinach so served plain yoghurt.

This meal was a winner and everyone liked all the components. Very easy to make and lovely and fresh with the parsley and coriander.

Thursday 28th October - grated cheese, jam, muffins, salsa, ragu

Thursday 28th October
Morning - grated cheese to go on the girls puff pastry scrolls for lunch (and extra for dinner)

Afternoon - made orange and carrot marmalade.
1 lemon, 2 oranges (370g), 2 carrots (200g)
blitz speed 5 for 5 secs
Added 500g water (think this was a little too much)
cooked 30 mins, 100° speed 2 reverse
Added 750g sugar
cook 30mins 100° reverse speed 1
Didn't think it would set so added half a packet of jamsetta and cooked 10 mins more.

In the end it set very well so not sure how it would have gone without the jamsetta.

Dinner we had nachos.
So made a Salsa

300g tomatoes
1 spring onion
1 capsicum (or mixed capsicum to equiv of 1 whole - I did green and red)
bunch of parsley
20g olive oil
juice of one lime

Put tomatoes, spring onion, capsicum, parsley in TMX and chop 8 sec sp 5 (or however long for the consistency you want).
Add olive oil and lime juice and mix 10 sec, sp 1.

I like my salsa spicer so added 1/2 teaspoon of tabasco - in future will add 1/2 to 1 chili at the beginning.

Monday 25th October - bread pizza scrolls, chicken balls, coleslaw

Monday 25th October

Made bread pizza scrolls for the girls for lunch tomorrow and some rolls for dh to take to work.


Dinner - chicken balls (recipe from previous post http://thermomixmeals.blogspot.com/2010/09/friday-17th-september-chicken-balls.html ) , wedges and coleslaw

The chicken balls (chicken minced, bread crumbs made, garlic, onion, herbs and vegetables chopped and all mixed) and coleslaw (cabbage, green capsicum, celery, carrot) both made in the TMX.
The chicken balls I added and egg to this time as they seemed drier and needed something more to help bind them.
