Yesterday dd1 baked a cake for her sisters birthday
Using this recipe http://www.taste.com.au/recipes/9598/basic+sponge+cake (dairy free)

Decorated with icing sugar (of course also made in the TMX, strawberries and a fondant heart.


Served with strawberry sauce (EDC recipe, slightly less sugar).

A couple of batches of rice have also been made the last couple of days.

It's been awhile!

Thought I'd pop in to do a quick update.

The thermomix is still a mainstay in my kitchen, had to replace the seal but still going strong. Oh and, lol, I also need to replace the measuring cup at some point soon as the cup part came off the top - it's now a very short measuring cup! Silly thing was it was about to break into two and I was being super careful with it and then I left it sitting in place whilst kneading pizza dough! LOL, yep of course the top bit flew off as soon as things got bumpy!

OK last couple of days.

Made strawberry jam on Thursday - can't remember anything else, but it's still the easiest way to make jam.

Friday, made stock and wontons. (I still prefer my wontons boiled not steamed so did that but ground/grated all the ingredients in the thermomix - garlic, ginger, carrot, celery, mixed in mince, soy sauce, fish sauce).
And then added garlic, ginger and veg to the stock for the broth to go with the wontons.

Saturday - boiled eggs. Anyone else think the thermomix is the best egg boiler?! I'm not a big fan but it's one of my girls favourite eggs and the thermomix makes it so easy and they don't crack!

Chocolate cake - left the older girls making a couple of the Too Easy chocolate cake's from the EDC and yep even my kids found them too easy - well after they'd found the flour! (how many texts can that take!)

Sunday - Having family over for dinner.
Not sure if I used thermi in the morning but for the dinner I did a curry night.
Desert - firstly whilst clean I whipped cream for the cake (baked yesterday)
Dish 1 - a slow cooked beef and potato curry. I milled a bunch of spices, garlic and ginger in the tmx, (didn't clean out properly as the daal was going in next) added this to beef, onions and potatoes slow cooked on the stove. All put on before guests arrived.
Dish 2 - a chinese chicken curry. (so had all the ingredients cut up and ready to throw in except the frozen peas)  This I used a bought sauce from the chinese supermarket that my kids just adore - adding chicken, peas, onions, celery and mushrooms.
Dish 3 - Daal, my eldest's favourite is the EDC tomato Dahl so that's what I made.
I prepped everything up until the cooking of the lentils, tomatoes etc bit, all sitting in the tmx and then just turned it on when ready to cook)
So all cooking at once, rice in the rice cooker (which grr as always didn't do quite as good a job as the tmx, but at least it was minimal work from me and everything cooking at once so I could enjoy the company) and a lovely big meal served easily. Added in a greek yoghurt side and tomato and cucumber salad (lemon and vinegar dressing similar to the Indian cookbook one) and everyone loved it.

So easy and I have to say cheap to provide a great Indian feast - and we have so many leftovers, fed us today and tomorrow for lunch as well!!
Really all for under $30!

Today  - Monday - leftover day, lol!!

Tomorrow I need to do some baking for school starting back on Wednesday - planning some banana muffins, muesli bar of some sort, maybe some fruit balls. Or if I have some even some rice bubble bars as a starting back at school treat.






Saturday 15th October - porridge, spreadable butter, red and white 8 cake, mince for nachos

Breakfast - porridge.

Then made some spreadable butter (as per Quirky Jo's recipe - I used 150g butter, 150g ricebran oil, 150g water).

Made this Highlight cake from the forum.
Did half plain and half red, put in the white then the red and cooked in round donut tins, these will be put together to make an 8 for dd2's 8th birthday party tomorrow.

Dinner - cooked up mince for nachos in the tmx. (no recipe, lol)

Monday 12th September -porridge, chicken sauce, cake, rice

Breakfast - porridge

Made a slow cooked chicken dish but cooked up the sauce in the tmx.

Also made a cake (will admit to a Betty Crocker mix, they were on special, lol) for a morning tea tomorrow. Mixed up the cake mixture in the tmx.

Made rice to go with the chicken for dinner.

Thursday 30th (surprise surprise) porridge for breakfast :-)
Rice for lunch.
Chocolate and strawberry brownies. (forum recipe chocolate and blueberry brownies??? Will have to try to find the recipe as a quick search didn't find it and I worked from a print out).
Really yum, initially thought they weren't chocolaty enough but yep it is and very yummy. The kids all loved the gooey strawberry surprise bits.

Saturday 14th May - boiled eggs, potato salad, mashed potatoes, chocolate icecream, lemon yoghurt cake, Gourmet beef,

Breakfast - boiled eggs

Lunch - cooked up cubed potatoes and made a potato salad
(cooked potatoes, cooked crispy bacon, parsley, red onion, mayonnaise and yoghurt)
Also used some of the potatoes to make mashed potato.

Afternoon - made Julie O's chocolate ice creambut added 150ml milk - this made the quantity up to the amount my ice cream maker needs and I think made it just right, still very rich but not as overpowering.
Also dd1 made Lemon Yoghurt cake, recipe also on the forum.

Dinner - Robyn's Gourmet Beef - added carrots and mushrooms to it and served with rice.
Dessert was the cake and icecream.

Sunday 8th May - juice, shortbread, muffins, yorkies, gravy

Happy Mother's Day to those that are celebrating today. Hope you were spoilt!

Breakfast - orange and mandarin juice (to go with mother's day bacon and eggs).

This morning made (well dh helped dd1) shortbread. Then some cheese and zucchini muffins for lunchboxes this week.

Dinner was roast lamb - yorkshire pudding batter and gravy made in the tmx.

Saturday 9th April - scones, bread, yorkshire pudding and gravy

Made scones (nay-nay's recipe, though used some buttermilk from making butter yesterday 1/2 and half with milk) Yum, so light and fluffy.

Made a loaf of bread.
So nice to have homemade bread again. The only problem is the kids can't slice it to get themselves breakfast.

Dinner - had roast lamb, roast potatoes, roast mushrooms, yorkshire puddings (batter in tmx), carrots and broccoli, gravy (made in the tmx).

Friday 25th March - chocolate cake

Made a chocolate cake mix for a cake to take to the cake stall at the school polling booth tomorrow.

And think that was it as had scrambled eggs for breakfast, wraps and leftovers for lunch and sushi for dinner (did the sushi rice in the rice cooker as put it on before going out on the school run).

Saturday 5th March - chocolate cake, chocolate ganache, vegie sausage rolls, honey, soy and lime marinade, creamy tomato pasta, chicken stock

It's dd3's 4th Birthday Party tomorrow so made
Chocolate Cake and Chocolate Ganache to ice it.

Decorated with chocolate numbers to make a clock face (was a bit of a squeeze to get the big ones on, lol, though looks a bit neater irl.

Made a honey, soy and lime marinade for chicken drumsticks (having a BBQ tomorrow).

For dinner the girls had creamy tomato pasta.

I also made some chicken stock (just because I had a carcass to use up - but thinking soup and leftovers will be good for dinner tomorrow night).

Friday 28th January - smoothie, chicken udon soup, lime yoghurt cake, honey soy chicken drumettes

Breakfast was a smoothie.

Lunch I made chicken udon soup (garlic and ginger blitzed, chicken stock from yesterday added, then with 10 mins to go some frozen mixed veg, and then 3 mins from end some chopped up udon noodles). This is the girls current favourite soup and ever so easy.

Dinner - a real favourite here - the honey soy chicken drumettes from the forum.
Served with rice (rice cooker at the same time) and steamed (varoma) vegetables. Bottom tray had loads of brocolli, carrot and beans, top tray I did a couple of large mushrooms with a bit of garlic salt and a knob of butter.
Think I'm addicted to these chicken wingettes, lol!!

Dessert was Lime and Yoghurt Cake from this recipe.

I used lime instead of lemon (and added a bit of the juice, but for me could have still been a bit more citrusy)
A really lovely light moist cake.
I slightly over cooked it (didn't read the loaf pan and did it in a cake pan) so the outside was quite crispy (dd1's favourite bit of the cake though, lol) but it was still so light and lovely.
Will add this cake to my favourites folder.

Sunday 26th December - smoothie, cheese bread, bread, dip, banana bread, potato and eggs, Mongolian Beef

Hope everyone had a lovely Christmas Day.

The Thermomix had a good work out today after it's day off (nearly) yesterday.

Breakfast - smoothie

For lunch made a couple of small free form cheese and wholewheat loafs (with cheese in the middle and on top) served with various salads, ham and dips.

Also made a loaf of bread for tomorrow (cracked rye and black chia)

Made a garlic and herb dip (with parsley and chives) to replenish the one that was eaten yesterday. btw the pate was a massive success - everyone loved it and were very impressed it was homemade.

Made banana bread - http://www.forumthermomix.com/index.php?topic=2962.0 as we had a couple of bananas needing eating up.
This is a lovely recipe. Very light and moist banana bread.

And cooked cubed potato in the varoma and eggs in the basket for potato salad for tomorrow.

Dinner was Mongolian Beef (MOTM). I had cubed beef so cooked it for 20 mins in total. Once again a hit, the meat is so tender from the marinating. I did put in a large green jalapeno chili only partly deseeded which made it a bit on the spicy side esp for the kids, but they still at it up and loved it.
Served with carrots and rice.

Friday 17th December - smoothie, bread, shortbread, popcorn prawns and vegetables

Breakfast- smoothie

An afternoon at home and made shortbread and a loaf of bread.

Dinner we had Popcorn Prawns. Went to the MasterChef live show at the Hordern Pavillion on the weekend and decided to recreate the Popcorn Prawns dish demonstrated by Peter Kuruvita of The Flying Fish.
I bought his chili salt to try out and use in the dish and will have a go at adapting it at some point as it's a nice and versatile seasoning.

For the prawns I made some popcorn.
Put 4 large handfuls into the TMX, ground 15- 20 secs spd 9.
Added to this a tsp of chili salt
And a tsp of sumac.

I then cooked the prawns as well as some carrots, capsicum and mushrooms (the vegies in the bottom of the varoma, the prawns in the top and added later as they were cooked prawns that just needed heating through).

Dip the cooked prawns in garlic mayonnaise (made in the tmx of course - I used plain mayo as that's what I had to use up, but will make garlic next time) then in the popcorn mixture.

I was a bit sceptical but these were really nice, all the flavours worked well together and I'll def make these again, a lovely addition to plain prawns and very little work (and the girls love popcorn).

Sunday 12th December - Beef Stroganoff

Was out all day celebrating dd1's birthday but dinner was Beef Stroganoff (cooked by dh as dd1 and I were out).

BTW here is dd1's cake. The cake is the forum Bimby Chocolate Cake with vanilla icing and purple sprinkles and chocolate butterflies and stars in blue and purple and a chocolate 9.

Saturday 11th December - cake, banana muffins, tortilla's, ravioli, lentil curry

It's dd1's birthday party tomorrow (going to Putt Putt Golf at Dural) so cake making today.
Made the large chocolate cake from the forum, also made a variety of blue and purple chocolate butterflies and stars to decorate it, as well as blue chocolate 9 (she's turning 9 obviously).

Also made some banana and choc chip muffins (forum recipe), for general eating and also will send a variety of these and cheese and zucchini muffins for dd2 to take to school on Monday for a class picnic.

Lunch - made Trudy Olive's tortilla's. (forum recipe)

Dinner - spinach and feta ravioli, made the filling in the tmx (cooked spinach, added feta and blended) and also the pasta dough. dd1 made up the ravioli's. (not the best example as this was one of the last ones when we were running out of filling).


And later dh made himself lentil curry (from his own very long winded recipe - smelt great though).

I had leftover Butter Chicken from the freezer and made rice to go with it.

Saturday 16th October - boiled eggs, bread rolls, Creamy Chicken and Brown Rice soup, Bimby Choc Cake and Icing, Apricot Balls, Gourmet Beef, Bread

Though I didn't add the chicken and used liquid chicken stock. This was really yummy, highly recommend.


Made - Bimby Chocolate Cake

Cake for dd2's birthday party tomorrow


Attempted these APRICOT NUT BALLS for the girls snacks for this week.

Had to really tweak, I'd left it all to cool then added and mixed as said, but nothing was blended and the dry stuff just sat on top, lol. Not sure if it was too cool.

So I blended up on speed 6 for a bit then added a little water and cooked for another 5 mins. Worked well.

So in future I would try blending all the ingredients then cooking.

Also I used oats instead of almonds as didn't see they were meant to be chopped till after I'd started, but how I ended up doing it would have been fine putting them in whole as they'd chop up when I blended it all.



Served with rice, carrots, beans and peas.
This was really nice. A lovely rich but mild flavour that all the kids liked. dd1 thought it would make a lovely pie filling. dd3 had several serves. Will be making it again.

Also made butter icing for dd's birthday cake.

And a loaf of multigrain bread for tomorrow.

All this with a rotten cold!! So glad I have a Thermomix!

Wed 13th October - dairy free chocolate cake, mayonnaise, butter icing

Made this cake http://www.cacaoweb.net/easy-chocolate-cake.html but with rice almond milk for a dairy free alternative. For my daughter, Amelia's, birthday today.

Then made Judy Dawn's magic mayonnaise (on the thermomix forum) - still not what I'm looking for so onewards with my mayo quest. But it was very easy - but too much lemon, my lemon's must have been very strong.

This afternoon had a great idea on the Great Dairy free cake quest for Amelia's party on the weekend. (one of her friends is dairy free).
The cake today was nice but really struggling with a nice dairy free icing. So cut out a flower shaped piece of today's cake and have frozen it for her friend for Sunday and
made Butter Cream Icing (this recipe from faffa 70 in this thread http://www.forumthermomix.com/index.php?topic=4154.0)
125g Butter
1 teaspoon vanilla
185g Icing Sugar
2 tablespoons milk

to ice the rest of the cake.
And will make a regular cake for the rest of the party guests on the weekend.

Saturday 9th October - rice-almond milk, dairy free choc cake, honey soy drummettes with stir fry veg

Need to make a dairy free cake for dd2's birthday party next weekend as one of her little friends is dairy free.

Including making the rice-almond milk - was astounded by how easy this was and how much the supermarkets charge for rice milk!!!!
This was a really nice cake and think will be the goer for next Sunday.

Dinner - was one of my favourites - honey soy chicken drummettes with stir fried veg.
Made the marinade as per the recipe on the forum (linked from an earlier post)- made the marinade in the morning and left them in it for the rest of the day, I also cook them in the marinade, added the vegies to the varoma for last 8 minutes, then took the chicken out, tipped the veg in and stir fried in the sauce for 2 minutes.
Served with rice. yum.
