Thermomix is still very much part of our kitchen, and super jealous of those with a new one!!<br />

A few things from the last week.<br />
- rice for fried rice<br />
- mashed potatoes<br />
- cookie mix (dd1's super delicious triple chic chip cookies!)<br />
- Yorkshire pudding mix to go with Sunday roast<br />
- chicken stock (from bones/leftover bbq chicken)<br />
- and resulting soup (stock, garlic, little chili paste, tin tomatoes, 1/2 tin four bean mix, small shell pasta, Worcester sauce, pepper )<br />
- boiled eggs (twice, for breakfast with extras for lunch)<br />
- strawberry jam (strawberries are so in season at the moment, super yum and cheap)<br />
<br />
So as you can see the thermomix is not an investment we regret even after all this time.<br />

I think it's really interesting to see how the Thermomix has settled into life here a few years down the track.<br />
I no longer feel I have to use it every day but it's a much loved part of the kitchen.<br />

The last few days the Thermomix has helped make:<br />

Sunday - being a Sunday and at home I made a few staples.<br />
<br />
Chicken stock. Still such a regular in our house as we love soup (and other things made with quality stock). I also find store bought stock too salty. (eldest loves it, lol).<br />
So chicken bones, onion, garlic, celery, peppercorns, bay leaf, (maybe a carrot? but don't think so) all in the basket, water in the bowl.<br />
Cooked for 45 mins .<br />

Basically use the crepe recipe in the EDC but I make 1.5 + times the mixture, we go through a lot of pancakes and any leftovers go into school lunches.</div>

Jam I use 500g strawberries, a lemon (peeled and some of the rind added), 200g sugar and 1/2 a packet of jamsetta.</div>

Monday 25th I made chicken and sweetcorn soup using the stock made on Sunday. With garlic, chili, leftover chicken and a tin of creamed corn. Such a simple and quick soup. </div>

Reading SFI's whilst on the treadmill at the gym this morning and saw this recipe. So simple. Packet of milk arrowroot biscuits, 295g tin of sweetened condensed milk, 125 g butter and choc chips. </div>

Pop the butter in the tmx and cook at 50 degrees for 1 min till melted, add the biscuits and whizz at speed 9 till crumbed, add condensed milk and mix. Then added some dark chocolate drops and mixed with the spatula and popped into a lined slice tray. Bake 45 mins, 150 degrees. Very sweet and rich and yummy!!!</div>

The thermomix is still a mainstay in my kitchen, had to replace the seal but still going strong. Oh and, lol, I also need to replace the measuring cup at some point soon as the cup part came off the top - it's now a very short measuring cup! Silly thing was it was about to break into two and I was being super careful with it and then I left it sitting in place whilst kneading pizza dough! LOL, yep of course the top bit flew off as soon as things got bumpy!<br />

OK last couple of days.<br />
<br />
Made strawberry jam on Thursday - can't remember anything else, but it's still the easiest way to make jam.<br />
<br />
Friday, made stock and wontons. (I still prefer my wontons boiled not steamed so did that but ground/grated all the ingredients in the thermomix - garlic, ginger, carrot, celery, mixed in mince, soy sauce, fish sauce).<br />
And then added garlic, ginger and veg to the stock for the broth to go with the wontons.<br />
<br />
Saturday - boiled eggs. Anyone else think the thermomix is the best egg boiler?! I'm not a big fan but it's one of my girls favourite eggs and the thermomix makes it so easy and they don't crack!<br />
<br />
Chocolate cake - left the older girls making a couple of the Too Easy chocolate cake's from the EDC and yep even my kids found them too easy - well after they'd found the flour! (how many texts can that take!)<br />
<br />
Sunday - Having family over for dinner.<br />
Not sure if I used thermi in the morning but for the dinner I did a curry night.<br />
Desert - firstly whilst clean I whipped cream for the cake (baked yesterday)<br />
Dish 1 - a slow cooked beef and potato curry. I milled a bunch of spices, garlic and ginger in the tmx, (didn't clean out properly as the daal was going in next) added this to beef, onions and potatoes slow cooked on the stove. All put on before guests arrived.<br />
Dish 2 - a chinese chicken curry. (so had all the ingredients cut up and ready to throw in except the frozen peas) This I used a bought sauce from the chinese supermarket that my kids just adore - adding chicken, peas, onions, celery and mushrooms.<br />
Dish 3 - Daal, my eldest's favourite is the EDC tomato Dahl so that's what I made.<br />
I prepped everything up until the cooking of the lentils, tomatoes etc bit, all sitting in the tmx and then just turned it on when ready to cook)<br />
So all cooking at once, rice in the rice cooker (which grr as always didn't do quite as good a job as the tmx, but at least it was minimal work from me and everything cooking at once so I could enjoy the company) and a lovely big meal served easily. Added in a greek yoghurt side and tomato and cucumber salad (lemon and vinegar dressing similar to the Indian cookbook one) and everyone loved it.<br />
<br />
So easy and I have to say cheap to provide a great Indian feast - and we have so many leftovers, fed us today and tomorrow for lunch as well!!<br />
Really all for under $30!<br />

Tomorrow I need to do some baking for school starting back on Wednesday - planning some banana muffins, muesli bar of some sort, maybe some fruit balls. Or if I have some even some rice bubble bars as a starting back at school treat.<br />

Firstly so I remember where it was from, chocolate sorbet.<br />

I did 100g sugar, 50g milk chocolate (didn't have dark), 40g cocoa powder, 1 large egg white, 3 trays of ice cubes.<br />
Was a bit too chocolaty (well that's what the kids said, they said less cocoa powder next time)<br />
Made heaps and a great low calorie version of chocolate icecream.<br />
<br />
And as I've been asked for my muesli bar recipe.<br />
I do :<br />
300g dried fruit (and chop)<br />
400g dry (oats, milk powder, pea protein powder, coconut etc)<br />
250g water (can use apple juice or add some honey if you want them sweeter).<br />
Mix, line a baking tray, spread evenly.<br />
<br />
Bake for 20 mins at 180 degrees.<br />

So yesterday 19th January using the Thermomix I made:<br />

Boiled eggs for breakfast - still think it's the best way of boiling eggs.<br />
Fruit balls (ground nuts, oats, dried fruit with lemon juice and water cooked up, mixed into the dry and made into balls), for snacks for the week.<br />
Chicken Stock<br />
and then chicken and veg soup (chicken stock, garlic, chili, mixed herbs, pepper, celery, carrot, onion, potato, green beans, soup mix, and a tin of tomatoes - as dd1 asked half way through if we could have minestrone, lol).<br />
Garlic butter<br />
<br />
So still using the Thermomix. We do eat salad type meals a lot but still wouldn't like to be without the thermomix.<br />

So spot light day, some of this weeks meals/favourites.<br />

No cook museli bars - sort of following the LTM recipe (see here or the themomix forum) melt the sugar, butter, honey and then added previously chopped dried fruit, oats, and some rice bubbles and/or corn flakes. (we had lots of leftover ends of cereal, lol).<br />
<br />
Mashed potatoes, as always a favourite. This was with grilled chicken and tmx steamed veg.<br />
<br />
Tuna and corn burgers - from good food magazine. 3 slices bread to breadcrumbs, 1/2 a tin of corn, blend, add tin of tuna rest of corn (both largish tins). chopped shallots. Make into burgers and fry.<br />
<br />
Chicken pie - using leftover roast chicken, sauted mushrooms and onions and made the gravy in the tmx.<br />
<br />
And of course our pretty much weekly chicken stock and resulting soup - such a great way to make the most of a roast chicken (already been roast and then pie). This weeks was a vegie soup - soaked and then cooked soup mix for 1/2 an hour, added thinly sliced vegies and cooked for another 20 mins.<br />

Didn't do the usual favourites of Butter Chicken and Dahl from the EDC.<br />
Tonight I made the Chicken Korma from the Indian cookbook - really yummy!! And everyone's absolute favourite - naan bread using the Indian book recipe (including the cumin and dried onion).<br />
Made the naan dough, Cooked the chicken Korma and popped into the Thermoserver. Then made rice in the thermomix, popped a cauliflower and mushroom dish cooking on the stove (heated little oil, added ground cumin and coriander and turmeric, cauliflower, tin of organic tomatoes, little water, mushrooms. Cooked for 10 mins with lid on, then a few minutes with lid off.<br />
Meanwhile was cooking the naan breads so all was ready together.<br />
All was devoured!<br />

Tuesday this week I took a couple of photos. </div>

Dinner I made the pea and ham soup from the Robogourmet app (used chicken stock made in the tmx instead of water). You really do need a small hock to fit in the steaming basket though. Those that liked it really did, but 2 out of the 5 of us didn't like it, included the two biggest soup eaters dd2 and dd3. So not going to make it onto our regular menu, but a nice ham and pea soup. </div>

Also made cheese topped bread rolls to go with it. </div>

Dessert was <b>custard tarts. </b></div>

Made a thickish custard in the tmx. Meanwhile take a packet of wonton wrappers. Place one wrapper, lightly wet, sprinkle on some castor or icing sugar, place a second wrapper on top so it makes a star type shape. Place in a muffin tin and bake 10-15mins. Allow the cases and the custard to cool. Then pour a bit of the custard in each case and put in the fridge to chill. </div>

My kids love cauliflower so loved this - they preferred raw, I preferred cooked. </div><div>But for anyone wanting to lower carbs, calories, glycemic load, and more protein then try this. I dream of the day when I will have time to pour over recipe books and try lots of new things (maybe over the school holidays???).<div><br /></div><div>But wanted to blog about dd1 today. </div><div>She is very interested in cooking, loves cooking shows, magazines and cookbooks and even regularly borrows them from the library. </div><div>But she is quite timid in the kitchen and usually her cooking something involves me cooking it and her watching, lol. </div><div>But she has made shortbread a few times in the tmx on her own. So this afternoon she asked to make some and with no input made the shortbread (including making her own rice flour), baked it, made a ganache and put the chocolate coating on. </div><div>She was very proud of herself as was I. She'd never made ganache before and really used her initiative. </div><div>But there is no way in the world even with a recipe she would have felt confident using the stove top to melt the chocolate etc, so once again loving my tmx. </div><div><br /></div><div>Have nearly convinced her that she would get such a great sense of achievement if she cooked dinner one night, told her to try something simple like stroganoff. </div><div><br /></div><div>Oh and the highlight of my cooking week - would have to have been the wonton soup on Wednesday night. Just a plain chicken stock (of course made in the tmx) with lots of garlic and some chili, with yummy wontons (mixture made in the tmx). super quick and easy (I premade the stock and wontons) as we had to be out early for the girls evening school concert performance. It's been such a great investment and saved me time and money and we also eat better. </div><div>I feel that maybe it's time to move the blog to a more interesting recipe base. ie yes everyone knows we eat a lot of porridge, lol. </div><div>So am thinking to just blog more on the main meals we cook and recipe links, and when I have time more of a general overview. </div><div><br /></div><div>And highlight of this week has to have been the enchilada recipe from the forum. Once again a total winner, dd2's absolutely favourite meal still. </div><div>For me I think the wontons, stock and wonton soup we had tonight. I love how easy it is to chop, mix, stir and make the wonton mixture. Haven't had them in ages as dd2 doesn't like them, so I tend to avoid but as I'm making heaps this week it wasn't a problem.<div><br /></div><div>Dinner had a chicken and veg 'fried' rice. I've taken to doing stir fry's on the stove top but I so love the ease of using the tmx, rice in the basket, chicken (marinated) and vegies in the varoma, cook for 16 mins, pop the chicken and vegies with some soy sauce, sweet chili sauce and sesame oil and cook for a minute, mix all together. Yum! And so easy. I prepped (10 mins before going to collect dd, home) then cooked for less than 20 mins and all ready to serve. Whilst it was cooking I did the lunch box washing up and general tidying.
