Sunday 14th August - pikelets, ltm's, curry, naan, daal

Breakfast - pikelet batter (using Naynay's recipe from the tmx forum)

Made LTM's (rice bubble bars) for the kids lunch boxes (recipe on the forum)

Dinner - Indian.
Made the slow cooked beef curry - used the other half of the curry powder I made a couple of weeks ago in the tmx, recipe link will be there, it's from the forum.
Made naan bread - the onion and cumin naan from the Indian cookbook.
Made daal - edc recipe mostly.
I also made rice but used the rice cooker whilst the rest was cooking away.

Sunday 1st May - porridge, smoothie, playdough, fruit balls, yorkies, gravy

Breakfast made porridge and smoothie.

Then made some playdough (red and white)
Then made some dried fruit balls for lunch box snacks for the week.

Dinner was roast lamb - made yorkshire pudding batter in the TMX and the gravy.

Sunday 27th February - pancakes, stock, soup, banana bread, fruit balls, marinade, mayo, carrot salad, fried rice

Breakfast - pancakes

Lunch - made chicken stock and then a soup using the stock, soup mix (cooked for 30 mins), mixed vegies (cooked for 15mins) and some pepper.

Once again a massive hit.

Dried fruit balls for this weeks lunch boxes:

Marinade for tonight's dinner (stir fried chicken) - ginger, garlic, chili, soy sauce, fish sauce, sesame oil.

Then made a batch of mayonnaise.


Also made a quick carrot salad for lunch tomorrow (hate to waste the mayo left in the bowl so leave a bit in and then chop a carrot and/or other veg).

Dinner - we had stir fried chicken, cashews and brocolli (using the marinade above) made on the stove top whilst the Thermomix made fried rice (garlic rice, with veg steamed in the varoma for 10 mins and eggs added to the varoma in the last 5 mins).

Was really pleased with this meal. Very quick to make and the marinated chicken was divine!



Wednesday 16th February - smoothie, ltm, mozzarella, tomato and basil muffins, quick curry, garlic spice chicken, rice, veg

Breakfast - smoothie

Lunch - I made a quick curry with leftover cooked meat, tablespoon curry paste, 1/2 a tin of tomatoes - 10 minutes, 100°, reverse speed 1.

Did some snack making.
1. Some LTM's. (rice bubble bars, forum recipe)

2. Mozzarrella, Tomato and Basil muffins.
Felt like different muffins and dd1 had been keen on tomato and basil the other night so made up this recipe. I really liked these as did the older two, dd3 didn't. But a really nice light muffin.
This recipe makes 24 mini muffins.

Ingredients:
200g plain flour
1 1/2 tsp baking powder
1/2 tsp baking soda
1 egg
200g milk
1 tomato quartered
150g mozzarella
1 1/2 tablespoons of fresh basil
20g oil

Method:
Preheat oven to 200°
Place basil in bowl and chop 4 seconds Speed 7
Add Tomato and mozzarella and chop 6 seconds Speed 6
Add flour, baking powder, baking soda, egg, milk and oil, Mix speed 4 10 seconds.
Pour into greased mini muffin tins and bake for 15 mins.


Dinner - Garlic spiced chicken with rice and vegetables.
Made a chicken marinade:
1 tbsp fresh oregano
3 cloves garlic
1 tsp ground nutmeg
1 tsp allspice
1 tsp paprika
20ml white wine vinegar
20 mls sherry
1 tbsp honey

Chop garlic and oregina 5 seconds speed 7
Add rest of ingredients and mix

Place chicken on baking paper in an oven dish and pour over marinade.
Heat oven to 180°
Place 800ml water in tmx bowl (no need to clean out from marinade)
Rice in basket.
Place chicken in oven and cook the rice for 16 mins, varoma temp, speed 4.
Place vegetables in varoma and add with 10 mins to go.

The chicken could also be cooked in the varoma in foil parcels.
Increase cooking time to 20-25 mins depending on thickness.

Really loved this marinade and will do again. Was a hit with all the kids. A nice sweetness and flavour.


Saturday 29th January - ricebubble bars, dried fruit balls, scones, whipped cream, nut butter, mongolian beef

Quite a work out for the Thermomix today and didn't even use it for breakfast (scrambled eggs and toast) or lunch (salads and wraps).

Made snacks for the kids for school (yah school goes back on Monday!!!! I can't wait to get back into dyeing and everything else for my store. So excited about some me time, doing things I love and Lara being at preschool two days so I can!!!!! Also lots of house sorting - read toy throwing out - planned. There is a toy box that is so rarely opened that I'm sure most of what is in it can go and I can put all of Lara's play kitchen stuff in it, but I know if I open it with the kids around they will all claim that every toy is the best and has to be kept.)

The unhealthy ones -Marshmallow Rice bubble Bars

These are very sticky so unless they set even more I don't think I'll put them in their lunch boxes they can have them as an after school snack. But they certainly loved them!!

Tip - when I make the ltm's I put them in a shallow tray lined with baking paper, then put another piece of baking paper on top for squishing them down. This gives a good dense bar that holds together. Refridgerate for a few hours until set and then place on a chopping board (no need to remove the bottom piece of paper - it's easy to move on the paper, and cut to size.)

Working to this 'recipe' I'd worked out in the Apricot Ball thread http://www.forumthermomix.com/index.php?topic=247.msg57826#msg57826 - using dried apricots, couple of dates and raisins, and oats, coconut, sesame seeds and milk powder for the dry ingredients.

After lunch made scones using Nay Nay's Family recipe
Really lovely light and yummy scones. Very impressed.
Also whipped the cream to go on them (and the jam was tmx jam as well)

Made nut butter from Quirky Jo's blog
Didn't really follow quantities (and made less than her recipe as wanted to see how it came out and if it will be eaten) just put in handfuls of each of the nuts (raw macadamias, raw almonds, roasted cashews) and a teaspoon of honey and blitzed, then added some rice bran oil until the right consistency.

So impressed by this!!!! Been meaning to make some for ages as dh loves peanut butter but never got round to it. Super quick and easy.

I can't eat peanut butter (allergies) but have actually been craving it lately and funnily was looking at a sate recipe the other day. This tasted just what I think peanut butter tastes like (dd1 thought it tasted more like cashews).

Dinner was Mongolian Beef.

So pretty much the Mongolian Lamb recipe in MOTM. But saute garlic and onions 5 mins. Add 1/2 a MC of water to the initial ingredients and cook for 15 mins. Added green capsicum and green beans (so a green rather than red mongolian, lol) and cooked a further 8 mins (100°, reverse, spd 1) This is still a favourite.




Sunday 9th January - rolls, bread, donuts, pasta, sauce

Made bread rolls for lunch (little half sized ones) and a loaf of bread (with black chia and multigrain mix).

The girls really liked these donuts so must do them more often, dd3 is always asking for donuts (even though I'm not too sure when she's had them, lol)

Dinner for the girls was home made fettucine (dough made in tmx) with a basic tomato sauce (1 clove of garlic, 1/4 onion, handful of herbs - chopped on speed 7, added oil and sauted 3 mins, added 4 large tomatoes and chopped sp 5, added 1 measuring cup of water, some worcester sauce and pepper. Cooked 15 minutes on 100° speed 1.

Friday 7th January - porridge, raw ranch dressing, coleslaw, ltm, choc icecream, honey soy drumettes and veg

Breakfast - porridge

Lunch - made raw ranch dressing and coleslaw

Raw Ranch dressing

1 cup soaked raw cashews

¾ cup water

2 tbsp lemon juice

½ tsp garlic powder

parsley and basil (small handful)

pinch of salt

(original recipe had onion powder, basil and dill)

Process the cashews, water, lemon juice, garlic powder, onion powder and salt until smooth and creamy - 1 minute speed 6-7.

Add basil and parsley and pulse 3 times to chop and mix.

using this http://www.forumthermomix.com/index.php?topic=2066.0 Egg free recipe with condensed milk. I did 300ml milk/300ml cream as find the full cream icecreams a bit rich.

Dinner - honey soy drumettes and varoma veg with rice
Still a favourite of everyone's!!

Thursday 25th November - smoothie, LTM's, bombay potato, stock

Breakfast - smoothie.

Made LTM's (rice bubble snacks for the kids)

Made a potato dish for lunch - based on the Bombay Potato recipe in the Indian cookbook but without the chili as had mother's group around and wasn't sure if some of the other kids might want some and probably don't like chili like my 3 year old. Was very nice so looking forward to making it properly.

Made stock from the chicken bones from lunch.

Saturday 13th November - mayonnaise, salad, shortbread, bread, choc icecream, tortilla, garlic butter, vegie soup

Made mayonnaise - as per the thread on the forum, so as per the edc but using vinegar and heating to 37°. A real success, now I can't wait to experiment with different flavours over the summer.


carrot and cabbage salad - Without rinsing from the mayo I made a carrot and cabbage salad to go with lunch.

dd1 made shortbread. Finally she is able to close the TMX lid so hopefully plenty more cooking to come from her.


Made a loaf of bread.

Made Julie O's chocolate ice cream from the forum http://www.forumthermomix.com/index.php?topic=2085.0. OMG this is so rich and delicious. So easy to make real chocolate ice cream with the TMX to melt the chocolate and mix the ingredients. I used my ice cream maker to churn it.


Dinner. Garlic bread tortilla's and vegie soup. (this was a slightly chunky soup which you can't see in the photo)

Made up a batch of tortilla's using Trudy Olive's recipe from the forum.
Made garlic butter (garlic, parsley and butter, mixed together, at 37 ° as the butter was from the fridge.
Whilst the girls divided up the tortilla dough I made a soup.
Chopped garlic, parsley and oregano. Added the chicken stock I made yesterday, added carrot, celery, spring onion and chopped. Added cubed potato and peas (that dd3 was podding), a little soy sauce, a little tobasco, pepper. Cooked 20 mins 100° sp 1

Cooked the tortilla's and for the ones for dinner spread some garlic butter on them and cooked for a few minutes in the oven till brown and crispy.
Yum, this was such a lovely dinner, the soup was nice and light (it was hot today) and the garlic tortilla's really tasty.
We had some of the chocolate ice cream for dessert - did I mention how yummy this was, lol.

Sunday 7th November - ltm's, bread, rice, veggies, lemon feta sauce

LTM's - kid's rice bubble snacks. Some I put choc chips on the top, some sesame seeds, others plain.



Bread rolls and loaf of bread.

Dinner - garlic rice, steamed carrots and beans and lemon feta sauce (to go with bbq chicken pieces)

Saturday 16th October - boiled eggs, bread rolls, Creamy Chicken and Brown Rice soup, Bimby Choc Cake and Icing, Apricot Balls, Gourmet Beef, Bread

Though I didn't add the chicken and used liquid chicken stock. This was really yummy, highly recommend.


Made - Bimby Chocolate Cake

Cake for dd2's birthday party tomorrow


Attempted these APRICOT NUT BALLS for the girls snacks for this week.

Had to really tweak, I'd left it all to cool then added and mixed as said, but nothing was blended and the dry stuff just sat on top, lol. Not sure if it was too cool.

So I blended up on speed 6 for a bit then added a little water and cooked for another 5 mins. Worked well.

So in future I would try blending all the ingredients then cooking.

Also I used oats instead of almonds as didn't see they were meant to be chopped till after I'd started, but how I ended up doing it would have been fine putting them in whole as they'd chop up when I blended it all.



Served with rice, carrots, beans and peas.
This was really nice. A lovely rich but mild flavour that all the kids liked. dd1 thought it would make a lovely pie filling. dd3 had several serves. Will be making it again.

The girls shelling peas for dinner.



Also made butter icing for dd's birthday cake.

And a loaf of multigrain bread for tomorrow.

All this with a rotten cold!! So glad I have a Thermomix!

Sunday 10th of the 10th - juice, nutty milo slice, shortbread, soup, pasta

Breakfast - Juice - apple, pear and orange.

Only made a half recipe amount and that still made tonnes!! I wrote the recipe out with the amount of each thing e.g 100g nuts, 100g seeds, and as I was using slightly different ones to those in the recipe I just made them up to that amount.

and dd1 made shortbread, so that's the snacks for the week done.

Made - cabbage and potato soup for lunch (with leftovers for dd2 for school tomorrow).

And dinner the girls had creamy tomato and salami pasta.

Monday 13th September - LTM, garlic bread, soup

The older girls were very excited I'd made more of these as they were a favourite. I pressed them into deeper bars so think they work better.

made the bread then folded the garlic butter into the loaf, mmmm the moistest garlicy bread, yum! Makes heaps.

chicken stock from yesterday, firstly ground garlic and chili, then added an onion and processed, then sauted for 2 mins. added chicken stock and heated for 5 mins, added the cooked chicken and veg (celery, carrot, small tin of sweet corn - the ones you get in a pack of 4) cooked for 10 mins then added the chopped spinach (I didnt have any chinese greens like bok choy) and cooked for another 5 mins.
Very yummy, and as for the bread the house stinks of garlic, it was lovely without adding butter and was worth it.




Wednesday 18th August - smoothie, choc balls, tuna pasta

Breakfast - banana smoothie


Snack - chocolate balls

I wanted to try these so didn't use coconut and change a few things around (had nearly run out of sultanas).

100g dates

60 sultanas

40g almond meal

40g milk powder

1/2 tbsp cocoa

1 tbsp boiling water

1 tsp psyhillium husk.

As per the recipe. Only did a small batch as wasn't sure about them but they turned out great! Made 10 nice sized balls.

A healthy chocolate treat. When I asked the girls what they were they immediately said chocolate balls.




Dinner - tuna pasta


Sort of like the EDC recipe (though I didn't notice it to later, lol).


Grinded a clove of garlic (8sec speed 7), then sauted in oil for 2 minutes (100 degrees speed 1) added 1/2 a zucchini, basil, parsley and a whole tomato and whizzed speed 6 for 8 seconds, added 1/2 a tin of tomatoes (was a bit less hence the extra tomato), bit of white wine and bit of water (so all up around 400 ml level in the bowl I think). Cooked for 10 mins 100 degrees speed 1. Added tin of tuna (the 185g tuna slices one) and pasta (this was just for the three girls so 8 good handfuls, lol, how I've always measured it so not sure how much that is) and cooked for 10 mins at 100 degrees, reverse speed soft.

Served with parmesan cheese.

For a larger family serving you'd need more liquid.


Friday 13th August - smoothie, LTM's, soup, rolls, garlic butter

Started the day with a banana smoothie from the Thermomix.

It had a busy afternoon.


First I made LTM's (kids rice bubble snacks) http://www.forumthermomix.com/index.php?topic=528.0 for the kids for an afternoon snack/next weeks lunch boxes.

These were an absolute hit.


Dinner was very much a Thermomix affair - chicken and vegetable soup and rolls.


Made bread rolls (edc basic recipe).


And soup with the chicken stock I made yesterday from the chicken from lunch.

First chopped garlic and peppercorns and ginger; then added the stock and finely sliced carrot, celery, zuchinni, red capsicum, cooked chicken and cooked for 15 mins 100ยบ soft reverse.


Then made garlic butter - garlic, basil, parsley, oregano - chopped, added butter and mixed.
