10th May 2012

Sorry for being so absent and really will try to start doing some more spotlight days.
Tuesday this week I took a couple of photos.
Dinner I made the pea and ham soup from the Robogourmet app (used chicken stock made in the tmx instead of water). You really do need a small hock to fit in the steaming basket though. Those that liked it really did, but 2 out of the 5 of us didn't like it, included the two biggest soup eaters dd2 and dd3. So not going to make it onto our regular menu, but a nice ham and pea soup.
Also made cheese topped bread rolls to go with it.
Dessert was custard tarts.
Made a thickish custard in the tmx. Meanwhile take a packet of wonton wrappers. Place one wrapper, lightly wet, sprinkle on some castor or icing sugar, place a second wrapper on top so it makes a star type shape. Place in a muffin tin and bake 10-15mins. Allow the cases and the custard to cool. Then pour a bit of the custard in each case and put in the fridge to chill.
Lovely served with berries!

Thurs/Fri 14th October - porridge, stock, broccoli soup, naan bread

Thursday - just porridge for breakfast. Was dd2's birthday so did her chosen dinner of prawns, cous cous and stir fry veg which I did on the stove top.

Friday - porridge.
Chicken stock.
Dinner - broccoli soup (garlic chopped, chili flakes, garam masala, sauteed, added 3 potatoes, head of broccoli and stock, pepper, cooked 25 mins and then blended).
And naan bread (dough of course made in the tmx).

Tuesday 6th September - chicken kiev

Made chicken kiev's for dinner, so the bread crumbs, garlic butter and chicken mixture all made in the tmx. (forum recipe). Yum as always!

Sunday 14th August - pikelets, ltm's, curry, naan, daal

Breakfast - pikelet batter (using Naynay's recipe from the tmx forum)

Made LTM's (rice bubble bars) for the kids lunch boxes (recipe on the forum)

Dinner - Indian.
Made the slow cooked beef curry - used the other half of the curry powder I made a couple of weeks ago in the tmx, recipe link will be there, it's from the forum.
Made naan bread - the onion and cumin naan from the Indian cookbook.
Made daal - edc recipe mostly.
I also made rice but used the rice cooker whilst the rest was cooking away.

Sunday 24th July - pancakes, curry powder, rice, naan, juice

Breakfast - pancakes

Dinner made this Beef Curry recipe. So made the curry powder in the tmx and then slow cooked the curry on the stovetop.
Meanwhile made an orange, mandarin and pineapple juice, yum!
To go with the curry I made naan bread (using the cumin and onion naan recipe in the Indian book) and also rice in the tmx.
The naan came out brilliantly, everyone was so impressed, restaurant quality.
Really loved the curry recipe, a great blend of flavours, absolutely packed with spices but not too spicy. Being slowcooked over a couple of hours it was so so so tender.
I used yoghurt instead of the coconut cream. Will definitely make this whole meal again.
Forgot to take a photo though!

Saturday 2nd July - cheesy bread rolls, Honey Beef and Beans

Bread rolls with cheese and pizza topper sprinkled on them. Yum
Dinner - Honey Beef and Beans
This is really yummy.
I cooked it for 40 mins, then added a can of rinsed chick peas and some sliced mushrooms and cooked for a further 10 mins.
A really lovely flavour, sweet and almost spicy, the kids all loved it and had seconds. I used chick peas as they are everyone's favourite beans and also added mushrooms, other veg could also be added. Served with rice.

Monday 20th/Tuesday 21st June - porridge, cheese, bread crumbs

Monday
Breakfast - porridge. (obviously a real winter staple for the kids, but it's cheap, filling and so easy to make in the tmx).

Was out for lunch (meeting some other lovely TMX owners from the Thermomix Forum!!)
and dinner was chicken kebabs and wedges in the oven.

Tuesday

Breakfast - porridge

Dinner - During the day made crumbed chicken breast pieces and chicken drumettes.
Grated parmesan and made the bread crumb mixture in the TMX.

Tuesday 7th June - porridge, bread, cheese sauce

Breakfast - porridge. With winter really setting in all the kids look forward to their porridge in the morning.

Made a loaf of bread.

Dinner - the tmx made cheese sauce for cauliflower cheese. (would it be wrong to send in a tub of cheese sauce for dd2 for lunch tomorrow, that's what she's asked for as she just loves this so much)

Saturday 9th April - scones, bread, yorkshire pudding and gravy

Made scones (nay-nay's recipe, though used some buttermilk from making butter yesterday 1/2 and half with milk) Yum, so light and fluffy.

Made a loaf of bread.
So nice to have homemade bread again. The only problem is the kids can't slice it to get themselves breakfast.

Dinner - had roast lamb, roast potatoes, roast mushrooms, yorkshire puddings (batter in tmx), carrots and broccoli, gravy (made in the tmx).

Sunday 13th March - muffins, bread, chili sauce

Made a double batch of cheese and zuchinni muffins for this weeks snacks.

Made a loaf of bread (missed bread making)

dh made a number of different strength chili sauces.

Wednesday 9th February - rolls, bread, burgers

Dinner - hamburgers. Made the rolls and burger mix (garlic, bread crumbs, mince, egg, worcester sauce, courgette, tomato sauce) in the tmx.
Also made a loaf of bread. Haven't been making bread the last few weeks due to time constraints, but it's so lovely to have a nice homemade loaf sitting there. Though I'm not meant to be eating it, lol.

Wednesday 19th January - smoothie, bread, choc chip cookies, fried rice.

Breakfast: smoothie

Made a loaf of bread (white with black chia))

Made dede's choc chip cookies http://www.forumthermomix.com/index.php?topic=5405.0 to take to a friend's in the afternoon.

And dinner was Jo's easy fried rice (without the coconut milk)
http://quirkycooking.blogspot.com/2009/08/thermomix-fried-rice.html

Used some chicken breast chopped up (tossed in a little soya sauce - didn't have time to marinade it), mushroom, cashews, corn/pea/carrot mix, and eggs.
Mixed with soy sauce and sweet chili sauce.
Yum!

Sunday 16th January - smoothie, porridge, rolls, salt and pepper chicken, rice, thai dipping sauce

Breakfast - made smoothie and porridge.

Lunch - made rolls - to go with sausages on the bbq and salads (so we could try out the tomato sauce from yesterday, lol, everyone loved it).

Dinner - Salt and Pepper Chicken http://www.forumthermomix.com/index.php?topic=5326.0 served with rice (TMX) and salad.
This was really nice and everyone ate heaps (in my case too much!), dh got to use his deep fat fryer! The kids really loved the Thai dipping sauce with this and drank what remained in their bowls. dh thinks we should do a salt and chili chicken next time.

For dessert the girls had a piece of the vanilla slice (properly set tonight). Yum.

Sunday 9th January - rolls, bread, donuts, pasta, sauce

Made bread rolls for lunch (little half sized ones) and a loaf of bread (with black chia and multigrain mix).
Made donut mixture for the donut machine using this recipe of Isi's
http://www.forumthermomix.com/index.php?topic=2789.0
The girls really liked these donuts so must do them more often, dd3 is always asking for donuts (even though I'm not too sure when she's had them, lol)

Dinner for the girls was home made fettucine (dough made in tmx) with a basic tomato sauce (1 clove of garlic, 1/4 onion, handful of herbs - chopped on speed 7, added oil and sauted 3 mins, added 4 large tomatoes and chopped sp 5, added 1 measuring cup of water, some worcester sauce and pepper. Cooked 15 minutes on 100° speed 1.

Tuesday 4th January - smoothie, mustard, pate, herb spread, vegie soup, bread

Breakfast - smoothie

Then made mustard - very impressed with this. Soaked the mustard seeds for a day and half in vinegar with a clove of garlic, then it took just a minute to make up the mustard today. The girls all had a taste (think I have odd children as they were all fighting over who got to lick the spatula - mustard at breakfast time, mmm) and declared it just like the other stuff (meaning shop bought). So another great money saver.

Then made a batch of pate.

Lunch - had some left over tortilla's in the fridge. So blended up some garlic and mixed herbs and put this with some mozarella on them and baked for a few minutes. Yummy!!! Served with salads.

Dinner - vegetable soup - chicken stock, garlic, ginger, some soup mix, mixed veg (I bought a big bag of frozen mixed veg - carrot, corn, peas - from the frozen berry place but as we never use frozen veg I hadn't used it. Went perfectly in the soup and the girls shared a bowl of the veg frozen whilst it was cooking - once again did I say my kids are a little odd?) - really nice soup.

Also served up leftovers - and that pork belly from last night was even better tonight!!

A loaf of bread.

Sunday 2nd January 2011 - potato cakes/hash browns, tortillas, smoothie, beef and beer casserole, bread

Breakfast - potato cakes and smoothie.

Made potato cakes - winged this a bit. Initially I chopped potatoes (3 largish ones) for 2secs on spd 5. Put into a bowl and added 2 eggs, salt, pepper and mixed. (had noted this recipe rather than the EDC one in my book) but it seemed to need some flour so added flour to get a good consistency.
These made the chunky hash brown (can see one on the right), wasn't sure about how these cooked so put the rest of the mixture back in and blitzed for 8 secs on sp 5 to make more of a batter.
Both tasted great, the batter ones were easier to cook.
Next time I'm going to try blitzing for 2-3 secs, removing half and then doing another 6 secs and mixing the two lots to give a batter with a bit more texture. Think that will work well.

Kids loved them, esp dd2 who managed 6!

Lunch - made tortilla's to go with salads etc.

Dinner - Beef and beer casserole (from my recipe - down as pork in beer on here) - really yummy.
Made a couple of changes. Added the vegies with 25 mins to go so they were crunchy (we like crunchy veg) and cooked at 90° (not 100). ETA I'm sure 25 mins is incorrect. I do veg under 10mins in the varoma and less in the bowl, may have meant 5 mins????
Everyone loved this again.
Made heaps.

And made a loaf of bread.

Monday 27th December - porridge, potato salad, coleslaw, bread rolls

Breakfast - porridge.

Lunch - made a dressing to go with the potato salad I'd prepared yesterday.
Made coleslaw and two lots of bread rolls as we had friends round for lunch.

Sunday 26th December - smoothie, cheese bread, bread, dip, banana bread, potato and eggs, Mongolian Beef

Hope everyone had a lovely Christmas Day.

The Thermomix had a good work out today after it's day off (nearly) yesterday.

Breakfast - smoothie

For lunch made a couple of small free form cheese and wholewheat loafs (with cheese in the middle and on top) served with various salads, ham and dips.

Also made a loaf of bread for tomorrow (cracked rye and black chia)

Made a garlic and herb dip (with parsley and chives) to replenish the one that was eaten yesterday. btw the pate was a massive success - everyone loved it and were very impressed it was homemade.

Made banana bread - http://www.forumthermomix.com/index.php?topic=2962.0 as we had a couple of bananas needing eating up.
This is a lovely recipe. Very light and moist banana bread.

And cooked cubed potato in the varoma and eggs in the basket for potato salad for tomorrow.

Dinner was Mongolian Beef (MOTM). I had cubed beef so cooked it for 20 mins in total. Once again a hit, the meat is so tender from the marinating. I did put in a large green jalapeno chili only partly deseeded which made it a bit on the spicy side esp for the kids, but they still at it up and loved it.
Served with carrots and rice.

Friday 24th December - pancakes, dips, pate, coleslaw, bread, shortbread, Honey Mustard Chicken

Breakfast - pancakes

In the morning I made - garlic and herb dip (with chives and parsley - a really nice change to the spring onions) and hummus for Christmas Day tomorrow.
I also made the chicken liver pate in the EDC - very impressed. So cheap, quick and easy to make two big pate containers - dh is currently enjoying some!
Will be off looking at pate recipes now as it's just so professional looking.

Made coleslaw (instead of cleaning the tmx after making the garlic and herb dip).

Made a loaf of bread.

And a double lot of shortbread.

Dinner was Trudy O's Honey Mustard Chicken. Another simple, quick and very tasty Thermomix meal. Compared to most other people we would go for a little more mustard (dh thought a little hot english, I was thinking a little dijon) as we like things with a lot of flavour. Kids all enjoyed so this one is def on the menu.
I cooked red capsicum and mushrooms in with meal and served with rice and carrots.

Thursday 23rd December - porridge, stock, bread rolls

Breakfast - porridge (well dd1 made it as I popped to the shops).

Had chicken for lunch so made stock. And bread rolls.

Lunch and dinner were similar - chicken, rolls, salads, lots of leftovers basically. Dinner everyone had some of the stock made into a light soup - just stock microwaved with some shredded chicken and pepper.
