Monday/ Tuesday 8th November - porridge, mashed potato and veg, 4 berry sorbet

Monday - breakfast - porridge
Dinner - mashed potatoes and steamed veg to go with a roast turkey joint that I'd cooked earlier (so all the timings could fit in with afternoon activities).

Tuesday - 4 berry sorbet, hot here today so a cooling sorbet was needed for after school treat.

Sunday 28th August - stock, chicken and sweetcorn soup, butter, orange muffins, vanilla pudding, mashed potato, steamed veg

Made chicken stock, and from that made chicken and sweetcorn soup (stock, cooked chicken, creamed corn, corn, seasoning) for lunch.

Made spreadable butter (recipe linked on here somewhere from Quirky Jo's recipe).

Made orange muffins (forum recipe using the whole orange) for this weeks lunch boxes.

Made vanilla pudding (recipe on here/linked, from the forum vanilla slice recipe but without the biscuits.

Dinner made mashed potato and steamed veg to go with schnitzel.

Tuesday 9th August - porridge, stock, mashed potato and veg

Breakfast - porridge (how boring!)

Made some chicken stock.
Dinner - we had lamb steaks served with mashed potato and veg cooked in the tmx.

Wednesday 27th July - porridge, potatoes

Breakfast - porridge

Not actually using the tmx but I made up another batch of yesterday's (tmx) wonton mix - was going to freeze the other half but instead made them up to be used for school lunch boxes/snacks.
Dinner - roast beef. Due to afternoon activities I cooked it during the day and also steamed some cubed potatoes (in the tmx). These I sauteed to make little 'roast' potatoes and added veg and gravy I'd made earlier for a super quick roast dinner.

Wednesday 20th July - porridge, mashed potato, sweet corn

Breakfast - porridge.

Dinner - made mashed potato and steamed veg in the TMX to go with sausages.

Sunday 3rd July - pancakes, potatoes and veg

Breakfast - pancakes

Dinner - Had pan fried veal with lemon sauce (this is one of my all time favourites and haven't had it in years!!! Everyone loved it so will be a regular), cooked baby potatoes and steamed veg (carrots, cauliflower and broccoli) in the tmx.
Oh and can anyone come up with a method of working out what the 4 year olds favourite veg is - tonight it was broccoli but last week she didn't like it!!

Saturday 14th May - boiled eggs, potato salad, mashed potatoes, chocolate icecream, lemon yoghurt cake, Gourmet beef,

Breakfast - boiled eggs

Lunch - cooked up cubed potatoes and made a potato salad
(cooked potatoes, cooked crispy bacon, parsley, red onion, mayonnaise and yoghurt)
Also used some of the potatoes to make mashed potato.

Afternoon - made Julie O's chocolate ice creambut added 150ml milk - this made the quantity up to the amount my ice cream maker needs and I think made it just right, still very rich but not as overpowering.
Also dd1 made Lemon Yoghurt cake, recipe also on the forum.

Dinner - Robyn's Gourmet Beef - added carrots and mushrooms to it and served with rice.
Dessert was the cake and icecream.

Friday 1st April - potatoes, prawns and veg

Thursday 31st March - poor tmx didn't get a use (our cold cuts night for dinner and out the rest of the time).

Friday 1st April -
Breakfast - smoothie
Dinner - new potatoes, prawns and vegies.

19 March - smoothie, boiled eggs, stock, jam, cottage pie

Breakfast - smoothie and boiled eggs

Made chicken stock

Strawberry Jam


Dinner - cottage pie.
Made the mashed potato and the mince and bolognaise in the tmx.
Added frozen mixed veg and topped with grated cheese before baking.

For those that love to hear of my kids strange eating habits, dd'2 2 & 3 had a bowl of the frozen veg with added grated cheese for a starter, lol.



Monday 14th February - chicken, potatoes and veg.

Wasn't around much and had leftovers for lunch so think I didn't cook till dinner time.

Dinner was Chicken Rolls (as we call them, flattened chicken breast pieces with fillings rolled up and secured in foil and steamed) with baby potatoes, carrots and sweet corn.

Fillings for the chicken were - cheese and olives, sundried tomato and basil, cheese, tomato puree, basil and olives.

Popped the chicken in the varoma with 1ltr water in the bowl, cooked 10 mins whilst preparing the rest, potatoes in the basket into the bowl and sweetcorn into the top varoma dish, cooked 12 mins, added carrots to varoma and cooked 8 minutes.

Oh and photo of yesterday's vegie rolls. (not the best one as didn't take a photo until tonight of the leftovers).
dd3 loved these, she didn't want to go to preschool but when I gave her a bit this morning and told her she could have the sausage rolls for lunch she changed her mind, and said this evening she'd go tomorrow if she could have the sausage rolls again!!

Sunday 30th January - hash browns, smoothie, cheese and zucchini muffins, guenter's crackers, chicken kebabs, potatoes and veg

Breakfast
Hash browns - did the removing 1/2 the mixture after 3 seconds and then blitzing the rest and think it went well.

Found these hard work to roll out, but then read a new tip to put the dough through a pasta machine! Would have made it much easier. I also left them in the oven as it cooled as the recipe said but they ended up a little overcooked.
Made the herb ones and they were very tasty so will try again.
Cheese and zucchini muffins - Yes school goes back tomorrow so more fridge/freezer lunchbox foods made, these were always a favourite.
Honey, lime and soy marinade for chicken kebabs.
Then cooked baby new potatoes and steamed veg in the Thermomix to go with the meats for dinner.

Tuesday 18th January - smoothie, beef kofta's, mashed potato, vegetables

Breakfast - smoothie

Dinner - Beef Kofta's (from the Junior Masterchef recipe I converted last year) with mash and veg.

I made the mince mixture in the Thermomix (including grinding the spices etc), then whilst they cooked in the oven, cooked mashed potato in the TMX and steamed carrots, broccoli and mushrooms in the varoma (the mushrooms I put a spoonful of butter and some garlic salt in them - really yum!)
The girls who don't like mash had leftover tortilla's from last night.

Thursday 13th January - smoothie, 'moussaka'

Breakfast - smoothie

Dinner - 'Moussaka'
Basically lasagne but with aubergines and potatoes instead of pasta.
I made mince and a basic bolognese type sauce whilst steaming the aubergines and potato in the varoma.
Then made a cheesy bechamel sauce whilst layering the ingredients in a baking dish, poured over, added some grated cheese and then baked in the oven for 40 mins. Cooked with lots of fresh oregano as well.
Yum!!
Had to laugh at dd3 who came over when I was dishing up and said "I don't like lasagne" so I told her it wasn't lasagne, it was moussaka to which she replied "well it smells like lasagne", she did eat most of it though. But yes lasagne isn't her favourite, but is one of dd2's 2 fav meals.

Sunday 2nd January 2011 - potato cakes/hash browns, tortillas, smoothie, beef and beer casserole, bread

Breakfast - potato cakes and smoothie.

Made potato cakes - winged this a bit. Initially I chopped potatoes (3 largish ones) for 2secs on spd 5. Put into a bowl and added 2 eggs, salt, pepper and mixed. (had noted this recipe rather than the EDC one in my book) but it seemed to need some flour so added flour to get a good consistency.
These made the chunky hash brown (can see one on the right), wasn't sure about how these cooked so put the rest of the mixture back in and blitzed for 8 secs on sp 5 to make more of a batter.
Both tasted great, the batter ones were easier to cook.
Next time I'm going to try blitzing for 2-3 secs, removing half and then doing another 6 secs and mixing the two lots to give a batter with a bit more texture. Think that will work well.

Kids loved them, esp dd2 who managed 6!


Lunch - made tortilla's to go with salads etc.

Dinner - Beef and beer casserole (from my recipe - down as pork in beer on here) - really yummy.
Made a couple of changes. Added the vegies with 25 mins to go so they were crunchy (we like crunchy veg) and cooked at 90° (not 100). ETA I'm sure 25 mins is incorrect. I do veg under 10mins in the varoma and less in the bowl, may have meant 5 mins????
Everyone loved this again.
Made heaps.

And made a loaf of bread.

Thursday 30th December - smoothie, mayonnaise, coleslaw, potato salad, chicken and brown rice soup, tortillas, stock

Breakfast - smoothie.

Then made
  • garlic mayonnaise
  • without cleaning the bowl some coleslaw
  • steamed potatoes and eggs for potato salad
To go with chicken and salad for lunch.

Dinner - QuirkyJo's Creamy Chicken and brown rice soup
And some of TrudyO's Tortilla's.
(with leftovers from lunch)

And some stock with today's chicken carcass.

Tuesday 7 December - smoothie, honey soy chicken, kfc coated chicken, mashed potato and veg.

Breakfast - smoothie

Lunch - honey soy chicken wingettes (forum)

Dinner - Did chicken strips (coated in Chookie's KFC coating) with mashed potatoes and steamed veg cooked in the TMX.

Thursday 25th November - smoothie, LTM's, bombay potato, stock

Breakfast - smoothie.

Made LTM's (rice bubble snacks for the kids)

Made a potato dish for lunch - based on the Bombay Potato recipe in the Indian cookbook but without the chili as had mother's group around and wasn't sure if some of the other kids might want some and probably don't like chili like my 3 year old. Was very nice so looking forward to making it properly.

Made stock from the chicken bones from lunch.

Tuesday 23rd November - honey soy chicken drumettes, fish with maple syrup and soy sauce, potatoes and veg

Lunch, I made my favourite honey soy chicken drumettes, yum!

Dinner, All in one varoma fish meal. Placed the fish in foil parcels with maple syrup and soy sauce (recommended by a Canadian friend, Penny) and cooked potatoes (white and sweet as per people's choice) and steamed carrots and brocolli. Loved the sauce. dd1 said numerous times how much she loved it - def on the menu again.
