Sunday 14th August - pikelets, ltm's, curry, naan, daal

Breakfast - pikelet batter (using Naynay's recipe from the tmx forum)

Made LTM's (rice bubble bars) for the kids lunch boxes (recipe on the forum)

Dinner - Indian.
Made the slow cooked beef curry - used the other half of the curry powder I made a couple of weeks ago in the tmx, recipe link will be there, it's from the forum.
Made naan bread - the onion and cumin naan from the Indian cookbook.
Made daal - edc recipe mostly.
I also made rice but used the rice cooker whilst the rest was cooking away.

Thurs 21 October - juice, bread crumbs, dahl

Thursday 21st October

Breakfast - orange and mandarin juice.

Dinner - I made tomato and lentil dahl (edc) and also Parmesan crumbed aubergine.
I fell in love with this recipe http://www.masterchef.com.au/falsomagro-with-crumbed-eggplant-and-tomato-sauce.htm on Junior Masterchef.

I created the crumb using:
1 clove of garlic
small handful of parsley
80g of breadcrumbs (broken up)
40g of parmesan (in cubes)

Added parmesan to TMX and chopped 6 sec spd 8
Added garlic, bread and parsley - chopped 5 sec spd 7

Sliced the eggplant and cut in half.
Then coated the eggplant in flour, egg and the above breadcrumbs and fried for a 2 mins each side.

They were nice but not as good as I'd hoped, didn't feel the parmesan flavour came through enough with that ratio.

Monday 16th August - honey soy chicken and tomato and lentil dahl

Lunch - Honey soy stir fry chicken wingettes

I quickly made up the marinade from this recipe for some chicken wingettes to go with salad for lunch - didn't have long to leave it to marinade so cooked it in the marinade, then poured the sauce over and let sit for a few minutes to cool a bit.

These were so so yummy. Will definitely being doing them properly for dinner one night.



Dinner:

I made the tomato and lentil dahl from the edc as a side dish.

I made a half quantity and a couple of substitutions.

Didn't have mild chilli powder so did paprika with a pinch of hot chilli powder

I don't eat coconut so substituted the coconut milk for half milk/half plain yoghurt.

And didn't have any limes so used lemon juice.

Was delicious!
