Monday 8th November - kfc spice mix, meatballs, flat bread, salad
Dinner was a request for the Skewered meatballs with Rosemary Flatbread, and Carrot Salad that was featured on last week's Junior Masterchef masterclass.
Here is my version adapted to the TMX.

Meatballs (though I think of them more as kebabs).
Ingredients
2 tsp cumin seeds
2 tsp coriander seed
1 tsp paprika
2 tbsp parsley
2 tbsp coriander
sprig rosemary
1/2 onion
400-500g beef (cubed)
zest 1 lemon
Method
Place cumin and coriander seed in bowl and cook 3min 100° sp 1
mill 20 sec sp 8
set aside
add onion, parsley, coriander, rosemary and lemon zest
chop 6 sec sp 5
Add meat and spices and mix to a smooth paste - closed lid position, pulse 4-5 times.
Place around a soaked skewer or rosemary stalk. (I did both and don't think using the rosemary stalk skewers added anything - though maybe as I'd added rosemary to the recipe).
I cooked mine in the oven for 15 mins but would be lovely grilled, fried or bbq'd.
Rosemary Flatbread
There recipe was
1 1/2 tbsp EVOO
1/2 cup warm water
250 g plain flour
1/2 tsp salt
1 tbsp rosemary
I mixed this up and then kneaded for 2 mins but it was too dry so added more water and rekneaded. It should be elastic and slightly moist but not too sticky.
Leave to stand for 20 mins, then break into small balls (1 inch round approx), and roll out on a floured surface (will need quite a bit of flour) until thin. Heat a non stick pan and dry fry the flatbreads.
Salads
I didn't make their carrot salad as it didn't appeal to us, but made 2 salads
1. Carrot, cabbage, green capsicum, parsely and coriander - chopped in the TMX with the juice of a lemon.
2. Tomato and Cucumber salad - chopped tomato and cucumber, tossed with chopped parsley and coriander and olive oil.
3. Didn't have any spinach so served plain yoghurt.
This meal was a winner and everyone liked all the components. Very easy to make and lovely and fresh with the parsley and coriander.
Monday 1st November - smoothie, lasagna
Thursday 28th October - grated cheese, jam, muffins, salsa, ragu
Morning - grated cheese to go on the girls puff pastry scrolls for lunch (and extra for dinner)
Afternoon - made orange and carrot marmalade.
1 lemon, 2 oranges (370g), 2 carrots (200g)
blitz speed 5 for 5 secs
Added 500g water (think this was a little too much)
cooked 30 mins, 100° speed 2 reverse
Added 750g sugar
cook 30mins 100° reverse speed 1
Didn't think it would set so added half a packet of jamsetta and cooked 10 mins more.

In the end it set very well so not sure how it would have gone without the jamsetta.
Dinner we had nachos.
So made a Salsa
300g tomatoes
1 spring onion
1 capsicum (or mixed capsicum to equiv of 1 whole - I did green and red)
bunch of parsley
20g olive oil
juice of one lime
Put tomatoes, spring onion, capsicum, parsley in TMX and chop 8 sec sp 5 (or however long for the consistency you want).
Add olive oil and lime juice and mix 10 sec, sp 1.
I like my salsa spicer so added 1/2 teaspoon of tabasco - in future will add 1/2 to 1 chili at the beginning.

Then minced some beef and made up the EDC ragu (for tonight's and tomorrow nights dinners)

Friday 17th September - chicken balls
made breadcrumbs, put aside
minced 500g chicken, put aside
chopped garlic, parsley and basil
chopped onion, zucchini, red capsicum, 100g feta
Added chicken and breadrumbs and mixed.
Made into balls and cooked 30mins 200degrees.
These were really yummy, dd2 in particular went back for fourths!
Loved the salty and creaminess of the feta.
Based on the edc recipe (well that's where I got the feta idea from).
Thursday 26th August - grated cheese, herb and garlic dip, hummus, mince, bolognaise for nachos

Wednesday 25th August - porridge, choc balls, pastry filling, jam, Baf's chicken, Strawberry Dream
Lots of work for the Thermomix today.
Breakfast was porridge
In the morning I made choc balls again as the girls really liked them- double the recipe from before but it was a bit runny (think I added too much water) so add 100g of shredded coconut (so I can't have them but that's probably good, lol).
Then I minced up garlic, spring onion, chicken, zucchini, mixed herbs and paprika to make 'sausage rolls' for lunch.
Then I made strawberry jam - as per edc added 25 g jamsetta and then also cooked it for 10 mins on varoma at the end.
Brilliant - perfect consistency and really yummy.
Dinner was baf's chicken http://www.forumthermomix.com/index.php?topic=1063.0 - dd2 and I really liked this but the other two weren't keen on the cheesy sauce - no idea why?!! It was yum!!
Desert I made strawberry dream (1/2 portion of the Fruity dream recipe in the EDC) with frozen strawberries, sugar and egg white. Yum, girls asked for more! The pic of my portion is a bit defrosted by the time I got round to it.
So simple and yummy will definitely do that again with different fruits.
Sat 10th July - boiled egg, pizza, rolls, hamburger
Breakfast - Boiled egg - very easy, perfect. The girls are always asking for boiled eggs but I rarely can be bothered but will definitely do them much more often now.
Lunch - pizza dough - using the edc recipe, so easy to knead in the thermomix, great tasting pizza dough
Dinner - bread rolls to go with salads. (was going to be hamburgers but I was too full from the pizza still when it got to the kid's dinner time). Just did the basic bread recipe with all baker's flour as don't have any wheat yet. Very yummy, perfect bread rolls.

- teaspoon of vege concentrate mix, breadcrumbs (previously created in the thermomix - freeze slices of bread and mill 10 seconds speed 6) , tomato sauce and the meat.
