Saturday 15th October - porridge, spreadable butter, red and white 8 cake, mince for nachos

Breakfast - porridge.

Then made some spreadable butter (as per Quirky Jo's recipe - I used 150g butter, 150g ricebran oil, 150g water).

Made this Highlight cake from the forum.
Did half plain and half red, put in the white then the red and cooked in round donut tins, these will be put together to make an 8 for dd2's 8th birthday party tomorrow.

Dinner - cooked up mince for nachos in the tmx. (no recipe, lol)

Fri /Sat 7/8th October - porridge, pasta sauce, pancakes, enchilada's, yellow rice

Friday - breakfast - porridge
Dinner for the kids - made a tomato, mushroom and spinach pasta sauce in the Thermomix.

Saturday - breakfast - pancakes

Wow this is so tasty!!!! Will def do again.
Whilst the enchilada's were baking I also made Turmeric rice in the thermomix.

Wednesday 3rd August - porridge, rice, mince for taco's

Breakfast porridge (recipe as on here)

Lunch - rice to go with leftovers from last nights curried sausages (edc rice recipe)

Dinner - taco's, made a mince in the tmx (recipe from my head, lol)

Friday 22nd July - porridge, rice, nachos

Breakfast - porridge.

Lunch - rice (to go with lamb and mushroom curry I made on the hob).

Dinner - mince - for nachos.

Friday 15th July - jam, mince, stock, gravy, ice cream, veg

Made a few things today, not sure if I can remember them all.

Made strawberry jam.

Made savoury mince - this was used on wraps for lunch (burrito's sort of) and also leftovers for tomorrow. It's my birthday so not planning on doing any cooking.

Made chicken stock.

Made gravy for chicken and mushroom pot pie for dinner (whilst browning mushrooms in a frying pan, then added the sauce and chicken to the mushrooms ready to go in the pies).

Made mixture for strawberry icecream.

Steamed veg for dinner.

Monday 4th July - savoury mince, pizza

Dinner - A bit of a deviation from the menu plan.
Had mince and was going to do lasagne, this became a pasta bake, that then became bolognaise pizza (so will have rethink the week, lol as pizza was also on the list for later in the week).
YUM!! Made pizza dough and then a slightly spicy mince and lots of vegies sauce in the TMX, popped the sauce onto the bases, with a few bits of leftover pepperoni and topped with mozzarella.
Loads of leftover sauce so will do a bake tomorrow night.
Really impressed by this as such a quick and easy pizza and could use leftover mince sauce and pita breads for a virtually instant dinner (we have to do some pretty quick meals during the week due to lots of afternoon activities)

19 March - smoothie, boiled eggs, stock, jam, cottage pie

Breakfast - smoothie and boiled eggs

Made chicken stock

Strawberry Jam


Dinner - cottage pie.
Made the mashed potato and the mince and bolognaise in the tmx.
Added frozen mixed veg and topped with grated cheese before baking.

For those that love to hear of my kids strange eating habits, dd'2 2 & 3 had a bowl of the frozen veg with added grated cheese for a starter, lol.



Tuesday 18th January - smoothie, beef kofta's, mashed potato, vegetables

Breakfast - smoothie

Dinner - Beef Kofta's (from the Junior Masterchef recipe I converted last year) with mash and veg.

I made the mince mixture in the Thermomix (including grinding the spices etc), then whilst they cooked in the oven, cooked mashed potato in the TMX and steamed carrots, broccoli and mushrooms in the varoma (the mushrooms I put a spoonful of butter and some garlic salt in them - really yum!)
The girls who don't like mash had leftover tortilla's from last night.

Monday 29th November - minestrone soup, mince, taco sauce

Lunch - minestrone soup (from the forum recipe not the edc one which isn't meant to be any good).
Dinner - Taco's - made the mince (beef and pork) and then cooked it with taco seasoning.

Monday 8th November - kfc spice mix, meatballs, flat bread, salad

Made up chookie's kfc spice mix from the Thermomix forum.

Dinner was a request for the Skewered meatballs with Rosemary Flatbread, and Carrot Salad that was featured on last week's Junior Masterchef masterclass.

Here is my version adapted to the TMX.



Meatballs (though I think of them more as kebabs).

Ingredients
2 tsp cumin seeds
2 tsp coriander seed
1 tsp paprika
2 tbsp parsley
2 tbsp coriander
sprig rosemary
1/2 onion
400-500g beef (cubed)
zest 1 lemon

Method
Place cumin and coriander seed in bowl and cook 3min 100° sp 1
mill 20 sec sp 8
set aside
add onion, parsley, coriander, rosemary and lemon zest
chop 6 sec sp 5
Add meat and spices and mix to a smooth paste - closed lid position, pulse 4-5 times.

Place around a soaked skewer or rosemary stalk. (I did both and don't think using the rosemary stalk skewers added anything - though maybe as I'd added rosemary to the recipe).

I cooked mine in the oven for 15 mins but would be lovely grilled, fried or bbq'd.

Rosemary Flatbread

There recipe was
1 1/2 tbsp EVOO
1/2 cup warm water
250 g plain flour
1/2 tsp salt
1 tbsp rosemary

I mixed this up and then kneaded for 2 mins but it was too dry so added more water and rekneaded. It should be elastic and slightly moist but not too sticky.

Leave to stand for 20 mins, then break into small balls (1 inch round approx), and roll out on a floured surface (will need quite a bit of flour) until thin. Heat a non stick pan and dry fry the flatbreads.

Salads

I didn't make their carrot salad as it didn't appeal to us, but made 2 salads
1. Carrot, cabbage, green capsicum, parsely and coriander - chopped in the TMX with the juice of a lemon.
2. Tomato and Cucumber salad - chopped tomato and cucumber, tossed with chopped parsley and coriander and olive oil.
3. Didn't have any spinach so served plain yoghurt.

This meal was a winner and everyone liked all the components. Very easy to make and lovely and fresh with the parsley and coriander.

Monday 1st November - smoothie, lasagna

Breakfast - smoothie

Dinner - lasagna so the parmesan was grated, meat sauce (including making the mince) and the Bechamel were made in the TMX.
A really nice lasagna following the EDC recipe.

Thursday 28th October - grated cheese, jam, muffins, salsa, ragu

Thursday 28th October
Morning - grated cheese to go on the girls puff pastry scrolls for lunch (and extra for dinner)

Afternoon - made orange and carrot marmalade.
1 lemon, 2 oranges (370g), 2 carrots (200g)
blitz speed 5 for 5 secs
Added 500g water (think this was a little too much)
cooked 30 mins, 100° speed 2 reverse
Added 750g sugar
cook 30mins 100° reverse speed 1
Didn't think it would set so added half a packet of jamsetta and cooked 10 mins more.

In the end it set very well so not sure how it would have gone without the jamsetta.

Dinner we had nachos.
So made a Salsa

300g tomatoes
1 spring onion
1 capsicum (or mixed capsicum to equiv of 1 whole - I did green and red)
bunch of parsley
20g olive oil
juice of one lime

Put tomatoes, spring onion, capsicum, parsley in TMX and chop 8 sec sp 5 (or however long for the consistency you want).
Add olive oil and lime juice and mix 10 sec, sp 1.

I like my salsa spicer so added 1/2 teaspoon of tabasco - in future will add 1/2 to 1 chili at the beginning.

Then minced some beef and made up the EDC ragu (for tonight's and tomorrow nights dinners)

Friday 17th September - chicken balls

Dinner was chicken balls

made breadcrumbs, put aside

minced 500g chicken, put aside

chopped garlic, parsley and basil

chopped onion, zucchini, red capsicum, 100g feta

Added chicken and breadrumbs and mixed.

Made into balls and cooked 30mins 200degrees.


These were really yummy, dd2 in particular went back for fourths!

Loved the salty and creaminess of the feta.


Based on the edc recipe (well that's where I got the feta idea from).


Thursday 26th August - grated cheese, herb and garlic dip, hummus, mince, bolognaise for nachos

This morning I grated cheese to go on the girls puff pastry things for lunch.

Then made herb and garlic dip and hummus to renew the dips in the fridge (we use hummus on wraps and the girls take dips to school regularly for morning tea with crudites) and some to take to mother's group.

Dinner we had nachos, minced the pork and then made a bolognaise sauce in the Thermomix.

Wednesday 25th August - porridge, choc balls, pastry filling, jam, Baf's chicken, Strawberry Dream


Lots of work for the Thermomix today.

Breakfast was porridge


In the morning I made choc balls again as the girls really liked them- double the recipe from before but it was a bit runny (think I added too much water) so add 100g of shredded coconut (so I can't have them but that's probably good, lol).


Then I minced up garlic, spring onion, chicken, zucchini, mixed herbs and paprika to make 'sausage rolls' for lunch.

Then I made strawberry jam - as per edc added 25 g jamsetta and then also cooked it for 10 mins on varoma at the end.

Brilliant - perfect consistency and really yummy.

Dinner was baf's chicken http://www.forumthermomix.com/index.php?topic=1063.0 - dd2 and I really liked this but the other two weren't keen on the cheesy sauce - no idea why?!! It was yum!!



Desert I made strawberry dream (1/2 portion of the Fruity dream recipe in the EDC) with frozen strawberries, sugar and egg white. Yum, girls asked for more! The pic of my portion is a bit defrosted by the time I got round to it.

So simple and yummy will definitely do that again with different fruits.



Sat 10th July - boiled egg, pizza, rolls, hamburger

Saturday 10th July

The Thermomix (maybe I need a name for it!!) had quite a busy day.

Breakfast - Boiled egg - very easy, perfect. The girls are always asking for boiled eggs but I rarely can be bothered but will definitely do them much more often now.

Lunch - pizza dough - using the edc recipe, so easy to knead in the thermomix, great tasting pizza dough

Dinner - bread rolls to go with salads. (was going to be hamburgers but I was too full from the pizza still when it got to the kid's dinner time). Just did the basic bread recipe with all baker's flour as don't have any wheat yet. Very yummy, perfect bread rolls.

Also made hamburger mix
- minced rump steak (12 sec speed 7)
- onion and garlic, added veg (parsnip, courgette, capsicum) and chopped
- teaspoon of vege concentrate mix, breadcrumbs (previously created in the thermomix - freeze slices of bread and mill 10 seconds speed 6) , tomato sauce and the meat.
Mixed on reverse.
dh was making this and I told him to put an egg in and he also ended up mixing it too long and over processing it! But hopefully still yummy just not the consistency originally planned.
Will report back on how these came out later.
